Introduction
Buffalo wings, a popular American dish, are traditionally known for their deep-fried crispiness and a spicy sauce made from a vinegar-based cayenne pepper hot sauce and butter. This air fryer version offers a healthier alternative by reducing the oil used while maintaining the iconic taste and texture.
Ingredients
- Chicken wings: 1 kg (split into flats and drumettes)
- Baking powder: 15 g (helps crisp the skin)
- Salt: 5 g
- Garlic powder: 5 g
- Onion powder: 5 g
For the Buffalo Sauce
- Unsalted butter: 75 g
- Hot sauce (such as Frank's Red Hot): 120 ml
- White vinegar: 15 ml
- Worcestershire sauce: 5 ml
- Garlic powder: A pinch
- Salt: A pinch (adjust to taste)
Instructions
Preparation:
- Pat the chicken wings dry with paper towels to remove moisture.
- In a bowl, mix the wings with baking powder, salt, garlic powder, and onion powder until evenly coated.
Cooking the Wings:
- Place the wings in a single layer in the air fryer basket, ensuring they are not overcrowded.
- Set the Air Fryer to 190°C / 25 ~ 30 Mins, flipping halfway through.
Making the Buffalo Sauce:
- Melt the butter in a saucepan over low heat.
- Add the hot sauce, vinegar, Worcestershire sauce, garlic powder, and salt, stirring until well combined.
- Remove from heat.
Tossing the Wings:
- Once the wings are cooked and crispy, place them in a large bowl.
- Pour the Buffalo sauce over the wings and toss to coat.
Serving:
- Serve hot with celery sticks and blue cheese or ranch dressing.
Tips:
Adjust the hot sauce quantity for desired spiciness.
In the absence of an air fryer, bake at 220°C for about 45 minutes, flipping once.
