Ingredients

  • Chicken Drumsticks: 1 kg

  • Kecap Manis (Sweet Soy Sauce): 2 tablespoons
  • Tamarind Paste: 1 teaspoon
  • Brown Sugar: 2 tablespoons
  • Lime Juice: 1 tablespoon
  • Coconut Oil: 2 tablespoons
  • Salt: 1 teaspoon

Instructions

Marination (Duration: 1-4 hours)

  • In a bowl, combine red chilli paste, minced garlic, chopped shallots, grated ginger, minced lemongrass, kecap manis, tamarind paste, brown sugar, lime juice, coconut oil, and salt. Mix well to create the marinade.
  • Add the chicken drumsticks to the marinade, ensuring each piece is thoroughly coated.
  • Cover and refrigerate to marinate for at least 1 hour, preferably 4 hours for better flavor absorption.

Preparation

  • Preheat the air fryer to 200°C (392°F).
  • Arrange the marinated drumsticks in the air fryer basket without overcrowding. Cook in batches if necessary.
  • Air fry for 10 minutes, then flip the drumsticks and continue cooking for another 10-15 minutes, or until fully cooked and crispy on the outside.
